Total and selective CO2 extracts are obtained from the same raw material by adapting the conditions of the extraction procedure. Under low pressure (80–140 bar), the essential oil – i.e. highly volatile components (mono- and sesquiterpenes) – are obtained from plant material. These so-called CO2-se (selective) extracts with their top notes have a superior quality in comparison to steam distillates by their fresh and typical flavor that is very close to the botanical raw material. These extracts are often used in Flavors or Fragrances.
CO2-to (total) extracts are produced under high pressure (up to 550 bar) and contain all CO2-soluble lipophilic plant constituents, e.g., essential and fatty oils, carotenoids, lipophilic antioxidants, sterols, tocopherols, other bioactive constituents, resinoids and waxes.
